Hi, I’m Adriana 👋

Most days you’ll find me in the kitchen, happily humming while braiding cinnamon buns. Baking has always been my biggest love, it’s my hobby, my work, and sometimes even therapy… at least until something burns (caramel, I’m looking at you 👀).

Sweet Alchemy is my little hideout, born from the simple joy of creating. I bake whatever I feel like, and then share it because really, who could eat 24 buns and a whole cake all by themselves? 🙈

Last year I brought my treats to the markets for the first time. I’d been told Kiwis were too conservative to pay for a poppy seed roll or a layered honey cake… but instead, people lined up, and I honestly cried with joy. Because when you truly love something - like I love honey cake and sweet yeasted dough - that love finds its way to others too. 💛

Now I’m dreaming of weekly pop-ups again. Cakes and pastries made with love, carrying a taste of nostalgia and plenty of inspiration from Central/Eastern Europe, where I come from. A little slice of home, baked fresh for you.

Hello, is anyone still here? :)

I wanted to share a little life update with all the wonderful Sweet Alchemy supporters. It’s been a month since my little business, my husband, and I moved to Christchurch in search of better opportunities.

It didn’t take long before I baked my very first honey cake here in Canterbury! I really hoped it would be as well loved as it was back in Wanaka… and it was! :) Empty, wiped-clean plates were proof enough!

Today, I also delivered a couple more cakes—one small, the other even smaller—just a little something to nibble on. Both were delicious carrot cakes with cream cheese filling sweetened with white chocolate and wrapped in brown sugar Swiss meringue buttercream.

My new kitchen is officially blessed with its first bake, and I’m happily stepping into the next sweet adventures ahead! :)

Let’s talk koláče – the sweet, pillowy pastries from Central Europe that taste like home.

These little rounds of enriched dough are traditionally filled with poppy seed, apricot, farmer’s cheese, or plum jam (slivkový lekvár), and often topped with a buttery crumble. You’ll find them at Slovak and Czech celebrations, tucked into picnic baskets, or just as a special treat with coffee.

They’re nostalgic, humble, and oh-so-delicious – a reminder that sometimes the simplest things bring the most comfort.

This cake is one of the most beautiful creations to come out of Sweet Alchemy since the very beginning. It’s a double-barrel 10" honey cake — which means two full-sized cakes stacked on top of each other. Inside, there are 20 delicate layers of honey biscuits and 20 layers of luscious sour cream filling. What made me happiest, though, were the flowers I somehow managed to get my hands on in the middle of this busy Mother’s Day season. 6.3 kg of golden, honey-sweet joy.

Another week, another round of dessert testing🍰🙃

Popular Dubai chocolate transformed into a multi-layered slice.
From the bottom: chocolate travel cake, kadaifi layer, Alunga namelaka, pistachio crémeux, and whipped Alunga ganache. I cut the slice into eight pieces, and it seems I made the right call, as it’s quite a sweet and rich dessert (despite adding salt to each layer). Definitely an impressive piece, and it works perfectly as a sweet ending to dinner!

I say "we" because Sweet Alchemy isn’t just me - it’s also my husband, who somehow always ends up deeply involved in the chaos (usually without signing up for it). Honestly, I couldn’t have done it without him.

To everyone who stopped by to cheer me on, give me a hug, or grab a treat - thank you! I’m still wrapping my head around the fact that I was out there selling my own cakes. Like, is this real?

Turns out, people love something a little different. The big hit of the day? My honey cake, with 10 delicate layers of honey pastry and sour cream filling. It flew off the table faster than I expected - note to self: make more next time!

The weather couldn’t make up its mind - cold and rainy one minute, warm and sunny the next. Basically, it matched my emotions: a total rollercoaster.

Hello friends,
I have another pastry chef life update for you.

In November, I had the incredible beginner's luck of successfully guiding three baking classes. Honestly, it has been the best professional experience of my life so far. The responsibility for other people’s success was immense, and my tendency toward perfectionism often drove me nuts. But love, honesty, and passion for baking were present in every session.

Meeting new people brought me unexpected joy—even as the ultimate introvert! Watching others have fun, learn, and grow in their baking journey was deeply fulfilling.

While juggling four days a week working in a local restaurant and pouring my energy into these classes, I also started the long process of finding a space in Wanaka where I could register my business and finally start baking for others. The cherry on top? I even signed up for my first market @gather_market_ on Sunday, 8th December—and am planning to sell my cakes and pastries at @uppercluthafarmersmarket the following week.

And guess what? I found a place and officially registered my business. I can now freely bake and sell!

But if I stopped here and let everyone cheer, I wouldn’t be honest. Because, truthfully, things don’t always go the way we imagine when we’re filled with excitement.

Here’s where the story takes a twist: in my rush, I made a mistake. I didn’t read the emails properly and only just discovered that I can only use my kitchen Monday through Friday—weekends excluded. I was blindsided. Events, weddings, and gatherings mostly happen on weekends, so this revelation hit hard.

The rollercoaster of emotions was intense: surprise, breakdowns, tears, hopelessness, guilt. I questioned if I had been careless, if I’d risked too much of our savings for this dream. Is it even worth it?

I always knew this journey wouldn’t be easy. But I never imagined how challenging it could be to navigate the constant ups and downs of running a tiny business.

For now, I’m still here, holding on, trying my best to figure out a solution. Wish me luck as I keep chasing this dream.

My very first baking class. Despite being exhausted and slightly sick, my satisfied customers brought a smile to my face. The last few weeks have flown by. Sometimes it feels like nothing is happening and things are moving slowly—but only about five months have passed since the first thought of hosting my own baking class, and today it became a reality.

So much work, tears, and joy have gone into this. But here I am with Sweet Alchemy. We will bake together, and I hope to soon introduce my cake and pastry menu for everyone in the Wanaka area to taste.

I had an absolute blast guiding six creative 8-year-old girls in a cupcake decorating class for a birthday celebration at their home! It was loud, fun, and filled with sweet moments as we decorated a variety of cupcakes together. 🧁💖

We used sprinkles, chocolate ganache, delicious buttercream, lollies, and so much more to create some super cute masterpieces! 🍭✨ It’s such a joy to share the magic of baking and watch their creativity come to life.

Sweet Alchemy is my small but delicious project, born from my love of baking.

Since the idea first came to me three years ago, I’ve had moments of doubt, wondering if it would make sense not just to me, but also to you—my future customers.

With a desire for freedom, creativity, and some challenges, I made the decision to start Sweet Alchemy Limited. There’s a lot of work ahead, and while I’m excited and happy, I’ll admit, I’m a little nervous too!

I’m slowly learning how to use social media, how to connect with potential partners, and making a long to-do list before I can bake in my own kitchen one day.

Wish me luck—I hope this journey is more fun than stressful! I look forward to seeing you at one of my baking classes or at a food market.

This project was so much fun! I truly enjoyed crafting this unique cake, which combines various techniques and decorations. The cake features a pillowy vanilla sponge, passionfruit caramel, honey-caramelized toasted almonds, and a rich chocolate filling. I coated it with a foolproof white chocolate ganache and topped it with perfectly shaped profiteroles.

It was an honor to create this cake for the 70th birthday of an incredible gentleman, and we were thrilled to be part of such a special occasion.
